I remember reading somewhere that the reason the barrels act so poorly in terms of gravity and correct interaction is due to a game setting that they disable. It is an accurate physics setting, and by turning it to simple physics they can support the 10,000 barrels are a decent framerate. In the accurate physics setting was on instead, They would be lucky to get one frame a second but atleast there would unlikely be any mysterious floating barrels.
However, I also heard that all the barrel videos have been recorded at 2-3 fps and then they have the game take screenshots in a set interval, and then they just stitch the game sound and screenshots back to video at full speed.
